Recipes that Rock: Iowa Corn Casserole

Many of you asked about Iowa Corn Casserole.
Well, it's truly amazing and delicious and EASY EASY EASY to prepare!
What's better than that?
Nothin.

I first fell in love with this recipe while serving a mission for my church in Iowa. I lived among the gorgeous rolling hills and farms of Southwest Iowa for 1 year and this reminds me of that time in my life.

So here's my cherished recipe. It's savory, but sweet. Perfection.


Iowa Corn Casserole


2 (17 oz.) cans cream style corn
1 (17 oz.) can "niblets" corn (undrained)
8 oz. sour cream
Dash of salt and pepper
2 eggs, slightly beaten
1 stick butter, melted
2/3 c. onion, finely chopped
1 sm. Box (8.5 oz) cornbread mix

- Grease 3 qt. Casserole dish.
- Mix all ingredients and pour into pan.
- Bake 1 hour at 350 degrees (until brown and dry on top).

Had to tell you... My brother used to live in Onawa, Iowa. I'll have to ask my SIL if she has this recipe. (they live in Nebraska now...)

im not much into cooking (my kids will confirm that!!) but this looks delicious and i'm tempted to go try it out!! wish me luck!! lol
i didnt realised you had served a mission....i wasnt in the church to have that opportunity but hope to in the future. im wondering if you would blog about it? i have made so many missionary friends in my 9 yrs as a convert and even their families are close friends and truly wonderful people whom i love to hear their mission stories!!
